Let me introduce to you.. 2 of my favorites (😉)

The last few days have been freezing in NYC! What foods do you go to this time of year? I love eating my vegetables warm in soups, stews, and roasted vegetables.

The beauty is that root vegetables and great winter greens are in season. One of my favorite root vegetables is yuca or cassava. Yuca you can eat it in the morning or any time of day. A personal favorite is yuca with mojo, and a fried egg. You can even bake with it as cassava flour. Yuca is a great source of Vitamin C, vitamin A, potassium, and folate. It's a great source of potassium for swimmers, especially if not fans of bananas. Naturally gluten-free so a great way to get starchy food without the processed flours.



Another favorite is plantains. Maduro or Verde, love either way. Last year, I shared my vegan version of mofongo feel free to make it and share it with me. Like yuca, you can eat it any time of day. I grew up eating it as a child in the morning as mangu. It's a yummy and filling breakfast. You can roast it, boil it or fry it (great in the air-fryer as well). Great source of fiber and high in antioxidants. Don't eat it raw.

Yucca and platanos are some of my favorite ingredients too! I like boiled yucca with grilled onions and a fried egg on top. Maduros are probably my favorite for platanos. However, I would enjoy either of these ingredients cooked in any way!
